Once you’ve got the spices in with the meat/onions/celery/pepper mix …. let it cook for about 10 or 15 minutes …. stir often ….scrape the bottom of the pan often….you don’t want it to burn but it’s okay if it gets a little sticky on the bottom.

Then, stir in 2 cups of rice and let that cook for about 5 minutes more or so….still stirring and scraping.  Then, add in 4 cups of broth — chicken, beef or pork broth …. if you don’t have any broth just use water.  Bring the mixture to a boil. then reduce the heat and simmer.  You want the rice just a smidge crunchy …. so that’ll take about 20 minutes or so.
